Mini Protein Berry Cheesecakes
- 1 small 170g tub of 0% Total Greek yogurt
- 2 tbsp of quark (or cottage cheese)
- 1 tbsp of coconut flour
- 1/4 cup of mulberries (or any other dried berry)
- 2 fresh organic eggs
- 1/4 cup of vanilla whey
Directions
- Blend ingredients together.
- Add 1 cup of fresh blackberries.
- Mix berries in with fork/spoon instead of blending.
- Pour the mix into your mold/s.
- Bake at 170º C (340º F) for about 35 minutes.
- Take them out, let them cool, eat them.

Shamrock Shake Pudding Shots
St. Patrick’s day is one of those holidays that we go all out for… Renting vans, calling off work, daytime drinking. Not saying I don’t pay for it the next day, but I look forward to it every year. So much fun!
This year I wanted to make some pudding shots to bring along. Bailey’s is overdone on St. Pat’s.. don’t get me wrong, I am sure I will have some. And it is not green. So I decided to use my old school favorite drink from when I was a kid for inspiration, the Shamrock Shake. When the shamrock shake is released, I still get excited. I don’t eat them anymore, but I know that it means spring is on the way!
In a large bowl, whisk together one packet of vanilla pudding, 1/4 cup vanilla vodka and 3/4 cup creme de menthe. When this is mixed well, fold in one container of cool whip. Spoon into clear plastic pudding shot cups and allow to chill for a few hours before serving. These can be made a few days ahead of time. They will hold a little longer than regular pudding because they don’t have any milk. Eat with a spoon!
